I have been doing good with the walk in the mornings during the week, but am too tired after working 12 hr shifts to walk on the weekends. I talked to chad last week about a goal that I set to walk the almost 4 miles to the Climax Tunnels and back. It would be about 7.5 miles.

Walking, walking, just keep walking.
I am on my 5th day of walking and so far so good. I started out at 2.1 miles and increased that to 3.7 and I am hoping to get 4 miles in today, but we will see. I am going to buy new shoes so I am hoping that I will get even more walking in before my feet hate me.

14.7 pounds to go.....
Before I reach my first goal of 199 lbs. I am hoping that I will be able to reach that goal before we leave for Nashville on July 2nd. I know that 14 lbs doesn't seem like a lot, but the closer that you get to a major goal the slower the weight comes off. I added walking to my plan and try to get a 2 mile walk in every day. When the rain stops my walk I feel blah and so I eat less. I am really going to start pushing myself to get that 14 lbs off. Once I reach that first goal I am really going to have to step up my game to get that last 50 lbs off. I am hoping to have it all off by January of next year.

My belt.......
A few years ago I had to get a belt because it was needed for a potential job. When I bought the belt it was the largest on that I could find and I was buckling it on the first and second hole. I am still using this belt, but since January I have slowly been working my way down the notches. I am not on the 6th set of holes. There is an inch between each of the holes. Since January I have lost 6 inches! I keep using this belt because 1. I need a belt to hold up my pants because they are all too big, but I don't want to it buy any new ones until I get down to at least 200lbs, and 2. I like that it is a reminder of where peasants where I am going.

A never ending cycle.....
I was so excited last week when I saw 218 on the scale. We went away to a competition over the weekend and normally that would be a good thing for me and I would have lost at least a few pounds. Not this time.... I gained. We went with another DM (dance mom) and I didn't stick to my diet, at all. I ate pork casadillo and pizza. Now I am working the night shift and so I am sleeping half the day and working at night. I haven't been tracking my foods either. I am hoping that with my schedule this week, I will drop a few. My goal is to reach that 210 point in the next 2 weeks.
Trying to stay on track.....
Since I started my job. I am working 12 hr shifts on weekends. My shift is 7 pm to 7 am. It is extremely boring and I find myself fighting to stay awake as the night goes on. I finish my paperwork and get my cleaning done and then there is nothing to do.
We aren't suppose to, but I bring myself a snack to munch on while I am doing my paperwork. I have been bringing either peppers or sugar snap peas with some hummus. I am also drinking my energy drink mix to try to keep me awake. When I get home in the mornings I have been eating two eggs and sometimes I will eat bacon or sausage and then I go to bed until 3 or 4. If I am lucky I will have a salad before I leave for work.
My last weigh-in showed 217.7. I am really hoping to drop at least 18 pounds in the next month to get below 200. If I can lose that 18 lbs, I will have lost over 50lbs in 5 months.
If the weather gets nice and stays nice I am going to start walking. Hopefully walking during the week won't stall me out.

When I am stalled.....
It is so frustrating when I am stalled. I was hoping that I would lose some last week when I was doing my training for my job, but that didn't happen. I gained and then lost this week, but didn't lose anything extra. I actually start working tomorrow and it is a 12 hr shift. I am a little concerned because I cant take my own food and I am sure that many of the meals they make are high carb. I don't know if I can do 12 hrs without food. I am going to eat my eggs before I go so that should help some. I need to figure out something that will keep me feel full.

Ughhhh
I blew my diet today.... Big time. I went to a buffet restaurant with my mom. I ate all of the things that I shouldn't have ate and it even made me feel crappy. I came home and ate a banana with peanut butter because I figured that I already blew it so I might as well eat something I really like.... Now I feel worse.
Not going to beat myself up. Will do an egg fast starting tomorrow and get back on track.

New job
I start orientation for my new job today. My plan is to work night shift when I get put on the schedule for a house. I am hoping that by working night shift I will be able to maintain my diet and keep losing weight.
I am taking my own lunches this week for orientation so I don't have to fear the unknown. I am hoping that after this week I will have lost a few more pounds.

Nope, not going to do it.....
I left for a while today and came home to this......

Cheese chips.....
A few weeks ago I had a run in with a container of Pringles. It was not pretty and the Pringles won. I knew that I needed to find something that I could snack on that wouldn't kill all of the progress that I had made so I went to Pinterest and started searching. I found a recipe for cheese chips that only required one ingredient..... Cheese.
Here is the recipe that I used.....
Cheese Chips
I use Great Value Fancy Shredded Fiesta Blend cheese to make mine. I suggest laying them on a paper towel when you take them out the oven to cool because they are a little greasy and that helps some.
I had seen somewhere that they used regular slices of cheese to make these as well, but they would be higher in net carbs. A serving of this cheese is 1/3 cup which makes about 6 chips. I always round the >1 net carbs up to 1. I usually eat mine with a Laughing Cow cheese wedge, or occasionally with some hummus.

Struggle.......
I am sure that there are others out there in the same position that I am in, but I struggle with portions when I am out to eat or at a friends/family members house. I can't just ask them to whip out measuring cups/spoons so I can portion my food. I am also not going to ask to see the packaging for the foods so I can scan it into my Atkins app. I usually try to judge what I think a serving is and go from there, but not knowing really bothers me. I come home and put in the generic non descript version of what I ate was and call it good. Usually when I do that I am way over my allotted numbers and that throws me off.
Since yesterday I gained a pound, but I guess that isn't too bad since I have done a lot worse in the past. I am concerned about this coming week because I am starting orientation for a new job on Monday. I think that I need to plan my lunches and probably dinner ahead of time so that I don't lose control and eat the things I shouldn't or too much of the things that I can eat. I am thinking quite a few salads this week will be happening. I might make some cloud bread so that will give me a little something more than a salad.

Small containers......
These containers work so well to measure out single servings of things like salad dressing, hummus, and dips. I had to replenish my stock of serving sizes of things and so I decided to use my little round containers to measure out my hummus and then I decided to measure salad dressing, miracle whip, and pepperoni chunks. I measure out my servings of jello (sugar free) this way to so I can make enough to last me all week.
Using these small containers helps me to keep within the proper serving size. If I didn't do this I know that I would eat more than a serving. Best thing is the little round ones are cheap. I picked the up from the Dollar General for a dollar or two for a package of 8.

Here is breakfast for today.
One cup of Bullet Proof Coffee
4oz of fresh pork sausage
2 large hard boiled eggs
The BPC is made with Folgers Caramel Drizzle coffee (k-cup on largest setting), 1 tbsp of coconut oil, 1 tbsp of butter (must be real butter), 1 tbsp of heavy cream, 1tsp of vanilla, and 2 tsp of Splenda (swerve makes it way too sweet for me).

I know tha some will say that it is a lot of fat, but most of my fat grams come from breakfast. I use the Atkins app on my phone to record my meals that helps me gauge where I am for the day with my totals.
My next meal will be lunch, which is usually a salad.

Good week so far......
After having a pretty bad week last week where I gained 6 pounds, I have been losing again and this morning I stepped on the scales and saw this......
Less than 75 lbs to go. I didn't reach the 220 that I wanted to before last week, but I might get there this week. Seeing that 220 on the scale will be nice.

I think I have an obsession.....
With Laughing Cow cheese!
I usually buy a container when I have a coupon, but when I went grocery shopping on Friday I found these at Sharp Shopper. It was .99 for one or $2.99 for a package of 4. With our trip coming up this week I picked up 2 packages.
These make a great snack when I just need something or when I am doing an egg fast. One wedge has 1g of carbs so I don't feel guilty when I eat one and I love the creamy texture.
What would be perfect is if I can find a "chip" or "cracker" to go with it.

I wasn't expecting it......
Yesterday I tried my BPC (bullet proof coffee) and it was actually pretty good. I had 2 cups of it and 2 hard boiled eggs for breakfast. I figured that I would fast all day until dinner time and then eat a small meal. I had made a beef roast, carrots, and noodles in the beef broth. I ate dinner about 5:30. I had about 3oz of beef, a tbsp of the noodles, and then later in the evening I ate about 3.5 oz of cherry tomatoes.
I was hoping that I would see a difference this morning, but wasn't counting on anything. I stepped on the scales and it said 228.6...... I was at 232.4 yesterday morning. I am hoping for good results for tomorrow too.

Bullet Proof Coffee.......
First let me say that I don't like coffee. I have read many things about bullet proof coffee, but the thought that it was coffee turned me off. After a really bad weekend and having been stalled at 229 for the past week I decided that I would try anything.
I looked up recipes on Pinterest and there are a lot out there but I just wanted something simple. I did change up the recipe and used caramel cappuccino instead of regular coffee and I didn't have any unsalted butter so I used salted butter instead.
Here is the recipe that I used......
Caramel Drizzle K-Cup (DO NOT USE THE BRAND SHOWN!!!! HAS 9g OF CARBS!!!)
1 Tbsp butter (I used salted)
1Tbsp coconut oil
1 Tbsp heavy whipping cream
1 Tsp Vanilla Extract
Use the middle setting on the Kuerig and brew coffee.
Put butter, coconut oil, whipping cream, and vanilla into brewed coffee.
You can use a blender, immersion blender, or bullet to blend. I used my bullet. Blend well and then drink. It will be frothy.
From everything that I have been reading BPC is suppose to help burn fat and give you energy. If it does both of things that would be awesome, but even if it only does one I am okay with that too. I am planning on having Chad try it too.

Stuck again......
Well I am stuck at 229. I am thinking that I may need to do an egg fast to get the weight loss started again.
I have been having an issue staying away from the Pringles lately. My mom buys them and leaves them sitting out. I will grab a few and tell myself that a couple won't hurt me. I have been testing for ketosis at least once a day and I have been between a trace and moderate amount.
I am thinking that I probably need to go back to the basics and go from there. Drinking more water might also help and drink my tea only twice a day with my vinegar.
Only a week and a half before we head to 7 Springs and I know that there is no way I will drop 30 pounds. Maybe I can get down to 220.

My brag......
I have to brag a little. This weekend was my daughters spring gala for her dance studio. This is a show where the competition and company dancers perform. At the end of the show they give of various scholarships. This year Summer was awarded a scholarship to pay for next years competition team fees.

My breakfast......
Every morning this is my breakfast....
A bottle of diet peach ice tea with 2 teaspoons of ACV and 2 hard boiled eggs. Sometimes I will add bacon or sausage, but most of the time it is just my tea and eggs. I am not sure if this the reason, but I have made it down to 229 lbs! I have lost 7.4 pounds since I started drinking the ACV two weeks ago.
I don't know if I will make it but 29 lbs to go this month. I will be happy with whatever I lose though.

Do know how boring sitting at dance is????
Summer is a dancer and is at the studio 4 nights a week for a total of 11 hrs a week. Usually Chad takes her to dance on Monday and Tuesday unless he has to work. Wednesday and Thursday are my days. Usually they aren't bad and time can pass quickly when I have something to do or someone to talk to. Tonight the only thing I have with me is my phone and my friend that I usually talk to had to go run errands. Yes there are plenty of other moms here, but none that I really talk to or feel comfortable enough to share things with. I am sitting here for 3 hours tonight completely bored and I think it is making it worse that I am hungry also because I haven't had a meal since breakfast and I only had a snack bar since then. Another hour and 15 minutes to go!

I'm melting... And I like it!!
This morning when I stepped on the scales I saw the number had moved down 4 oz from yesterday and I was happy with that. I crawled back in bed to relax for a few more hours. When I finally got up and went to get my shower I decided to step on the scales again and I had actually lost another 8 oz.

I believe that second one is more accurate because it was after I had used the bathroom and all of that stuff.
I keep thinking that maybe I will be able to drop to 200 by the time we leave for 7 Springs, but then when I was standing in the shower I started thinking..... OMG if I drop another 30 lbs I won't have any clothes to wear!!
I guess I will cross that road when we get to it.
One pan meal....
Any meal that I can make in one pan is a good meal. I am make chicken Alfredo with cauliflower, broccoli, and mushrooms for lunch.
I cut a boneless, skinless chicken break into strips and put them in a skillet sprayed with cooking spray. Cooked the chicken until fully cooked. Removed chicken from skillet and put a tablespoon of olive oil in and then added broccoli, cauliflower, and mushrooms (all fresh). I added a quarter cup of water and covered. I let them cook until tender and then added the chicken back in and poured a jar of roasted garlic Alfredo sauce. Let it cook until the sauce was nice and hot.
This is the perfect lunch for Chad and I. It has the protein and veggies I need for my diet and he can pair this with a slice of bread and still be good with his carb count.

New pizza crust.....
For some reason I was in a baking mood today and so I tried out two new recipes. The first I will post about when I can perfect it to the way that I think it would be good. The second one is cauliflower pizza crust. I found the recipe on Pinterest. The recipe is simple and can be adjusted to taste. I used the recipe to make cheesy bread sticks.

20 pounds down and 80 to go....
When I stepped on the scales and saw 232.4 I just thought that I had only lost 1 oz. must have been me going over my carb allowance yesterday so today I will have to be a little more careful.
I was just sitting here putting all my info into my Atkins account and every once in a while I will look at the progress report. I record my weight almost every day and so I decided today to figure out my total loss. Pulled out my calculator not thinking anything about the numbers as I plugged them in .... 252.4 - 232.4 ..... When I hit that = button and 20 showed up I was surprised. Yayyyyyy...... 20 pounds down!!!

Bread......
Since we spend 3 hours at the dance studio on Wednesdays from 5 to 8 I needed to think of a quick meal that I could make and eat before we left.
Here is my creation......
I made the 90 second bread like I did yesterday. I then buttered one side and placed in a hot pan like I was making grilled cheese and just added a piece of spam between the pieces of cheese. Grill on both sides. My bread was a little thick so I popped it in the microwave to melt the cheese completely. It is so yummy.
There is never a better feeling.....
I call this my magic drink......
I take a 16oz bottle of Diet Snapple Peach Tea and add 1tsp of Apple Cider Vinegar (ACV must say "with the "mother" on it) You could add it to whatever your drink preference is. I have seen some people say that they just mix it with water and lemon. I drink 2 bottles of this a day.

Something worked......
When I stepped on the scales this morning I wasn't expecting much of a loss, but I got a shock when it said I was down to 234.1. I actually looked at it a few times. I am hoping that I can keep the loss going. I have been consuming quite a bit less than 20g of net carbs that I have planned for. I also added ACV (apple cider vinegar) to my tea twice a day.
I found a recipe for 90 second bread that I really like. I found it on Facebook.....
1 egg
3 tbsp almond meal/flour
1/2 tsp of baking powder
1 1/2 tbsp of melted butter
Beat the egg and then add dry ingredients. Mix well and then pour into a microwaveable dish about the size of a piece of bread. Microwave for 90 seconds.
I added a little butter and garlic salt to mine when it was done so I would have garlic bread with my "spaghetti".

No pounds, but inches
I have to keep reminding myself that the scale does not always tell the whole story.
I have been bouncing around the same few pounds for about a week now and so the pounds aren't falling off like I would like them to, but this morning I put on a pair of my jeans that I was finally able to get into a few weeks ago and I needed to put on a belt. I have one belt that I always wear. When I got the belt I was wearing it on the first or second set of holes. This morning I was on the 5th set of holes. I also checked for ketones in my urine and it is showing a moderate level where as Friday it was only showing a trace. At least I am burning fat.

Pizza!!!!!
The one thing that I miss about eating low carb is pizza. I love my pizza and the other day I found a recipe for pizza crust using flax seed meal that I had to try. I made it exactly as instructed and it was so yummy. Here is the recipe......
What you will need:
I added pepperoni, mushroom, tomatoes, and peppers to mine. The one thing that I would change is that I would cook the peppers first unless you like them really firm.

What you will need:
- 1 1/2 cup of flax seed meal
- 2 tsp of baking powder
- 1 tsp of oregano
- 1 tsp of salt
- 1/2 tsp of Stevia or natural sweetener
- 3 eggs
- 3 tbs of olive oil
- 1/2 cup of water
- Preheat oven to 425 degrees.
- Mix dry ingredients together.
- Add wet ingredients and mix well.
- Let the dough sit for about 5 minutes to thicken up.
- Spread dough on a large round pan. If you don't have this you can line a cookie sheet with greased parchment paper (this is what I did).
- Bake for 15-20 minutes or until cooked through. Check it at the 15 minute mark and take out if it looks done.
- Add toppings and place back into the oven to melt the cheese.

Low Carb Recipes.........
I know there are tons of recipes out there that claim to be low carb and many that really are. I have tried a few of the recipes and will share the ones that are a hit with my and my family.
The most popular recipe in my house right now is one for low carb pound cake. I have made this recipe twice and both times it turned out yummy. The first time I poured the batter into a bread pan and made a loaf. The second time I used mini muffin tins and they came out like little bite size muffins. (my daughter loves these).
Here is the recipe that I used......
1 1/4 c. Almond Flour
3/4 c. Swerve or other sugar substitute
1 tsp Baking powder
1/4 tsp Salt
4 Eggs
3 1/2 oz Cream Cheese
4 tbs Softened Butter
1 tsp Vanilla
Preheat over to 350 degrees
In mixing bowl beat butter and swerve until well combined. Add cream cheese and mix well. Add eggs one at a time, continuing to combine. Add vanilla. When mixed well slowly start adding the dry ingredients until very well combined.
Spray loaf pan (or whatever pan you use) with non stick spray.
Bake for 30 to 40 minutes until golden brown. (my oven cooks a little faster so you may have to adjust your time)
The carb count for this is about 2g of carbs per mini muffin.

By the title you would think that I may write about dance, and I might. I am not a dancer, but my daughter is. The numbers that I will most likely write about will be measurements and weights. I am on a journey to lose 100 pounds doing a low carb, high fat diet.
I started my journey on January 2, 2016. I started this journey for a few reasons. The number one reason is for my family and myself. I started this journey at 252.4 pounds. My long term goal is 150 pounds, but I will not set a deadline for that weight. Deadlines push people to do crazy things and be disappointed in myself.
I started this woe (way of eating) by signing up on the Atkins website and following the guidelines. www.atkins.com is a great way to start no matter how much you have to lose. Since I have so much to lose I started with the Atkins 20 program. I am still in phase 1, but I feel comfortable in that phase, and I admit that I am not sticking to the strictness of the phase and what is allowed. I am really concentrating on how many carbs per day along with fat and protein.

Today is the first official day of my diet. I am sure that the first day is always the easiest because you just set the goal, but I am looking for it to get harder to stay on track as I go.

I know that it really isn't a bit deal and probably not very accurate but seeing that 2 lb drop on the scale today was a good motivator. I was happy to see that some of my favorite foods didn't have an or very little carbs in them so that was a big plus for me yesterday. I am having to play around with the menu because I am having a problem reaching the 18 carb minimum each day. The amount of water yesterday was an issue and I only got 3 glasses in. Today I am hoping to get at least 6 in.

Day three and I am still going strong. I have been doing a morning weigh-in each morning and I think that helps me stay motivated, at least for now. I lost another 8 oz. and even though it isn't the 2 pounds I lost yesterday, it is still a loss. I find that I have to push myself to eat all of the foods that are onl my menu for the day. I love the tools that this site gives me to work with. I am not following the phases exactly, but I am staying in the carb range. I need to figure out how to get more fats, as I am always below the fat recommended. I am finding that the veggies are getting easier. I don't follow the recommended food list for the phase one, but I am going to try to plan for more of the allowed foods. I think that I didn't plan out the food very well when I started. I am planning my first low-carb diet shopping trip this week.

Woohoo!!! I lost another 3.1 pounds. To some people that might not seem like a lot, but to me that is huge. That is a total of 5.9 pounds in 4 days (actually 3 because today would be the 4th day). Everyone keeps asking what my short term goal is, but I don't have one. I feel that if I set a short term goal then if I don't make that goal I will feel like a failure and give up. I am just taking it one day at a time. I feel that I am eventually going to hit a wall, but I am hoping that doesn't happen until I get closer to my goal wait. I don't even have an ideal size that I want to get down to, I just want to feel good about myself. With the small weight loss in the last few days I am starting to feel better about myself and that is keeping me motivated. I think that I am finally getting the whole idea of this plan and it is becoming easier for me to get my carb, fat, and protein goals in. I am hoping that it keeps going as smooth as it has been.

I usually post first thing in the morning because it seems to help me keep motivated and going through the day. I can always go back and read what I wrote as a way to keep myself motivated. This morning I had enough time to post my weigh-in and eat breakfast before I was out the door to go grocery shopping with my husband. This was my first major shopping trip since starting this journey. I went armed with a list, but when I got to the store and started looking at all of the food I was a bit overwhelmed. I was able to get the things that I needed and avoid most of the extra stuff except for what my requested. I was hoping to find some golden flax seed meal, but I don't know that I will be finding it around here. I am going to check amazon and see if I can order it. After we checked out I was a bit overwhelmed because of what it cost me and even told my husband that it was too expensive for me to do this. I had a mini meltdown in the car, but I was fine after that. Of course I came home and put away the groceries and I am very proud of all of the good stuff that I got. I did buy a couple of the Atkins meal so that I will be able to do something quick when my daughter has dance through meal times. I also picked up some of the shakes and snack bars hoping that they will help me out with some of the cravings for the sweets. Alas I did lose a little less that a pound again so I am staying motivated.

Todays weigh-in was not so good. I gained back almost a pound, but I am not going to let this discourage me. I have a big day out today and I am not sure how I am going to manage my meals but I have them planned so I am going to try to stick with them.

A total of 7.6 pounds in a week!!!
Today's weigh-in was not a good one. I expected some gain back though because I haven't been using the bathroom as much. I think that I am ketosis because my mouth is dry and I feel like I have bad breath. I had my menu planned out for today, but the sausage that I was going to use for breakfast was frozen. I had to redo my menu which frustrated me even more. One good thing is that I made a batch of cloud bread last night and added some of that with some whipped cream cheese to the menu so that I can get closer to my fat allowance. Going to work on tomorrows menu and start planning for this weekend. I don't want to fall off the wagon because I won't be home all weekend. If I plan my menu now and make the meals that I planned on Thursday morning I should be good. I am going to have to do some substitutions for breakfast on Friday however since we will be traveling to the hotel early in the morning.

Weigh-in was much better today. I think that I am back on track, but I am still a little worried about this weekend. I am going to try to plan out my meals and take them with me, or at least the food to make them. This will be a good practice for me for when we go to 7 Springs and Nashville.

I haven't posted anything in a while because of my crazy life lately. My trip went well and I stuck to my diet. I actually didn't meet any of my carb or fat amounts on a few days, but I still stuck to the plan. I am on day 18 and have lost over 10lbs so far. I don't want to set a short trm goal, or really any time frame for a goal at all, but I am hoping to have lost 50lbs before Easter. I am not sure if that is possible, but I will give it a shot. As I lose weight there is something that keeps weighing on my mind and that is when I do reach my target, I am going to have loose saggy skin and I might feel more subconscious about that than I do about my current weight. I guess that is a battle that I will fight when I reach that point.

After losing 12lbs I am stuck. I know that the last time that I lost weight I got stuck for a little while, but then started losing again. I am looking for ways to kick start the loss again. I know that I need to drink more water. I am going to work on getting my 8 glasses in again and see if that will help. If I don't see any results in about a week I will go back to the basics and start again.

I haven't wrote anything in a while. Things stalled a bit for me and I have been yo-yoing for the past few days around the same few pounds. Yesterday I decided that I needed to have a cheat day and so I went to lunch as a buffet with my husband. I didn't over-stuff myself, actually I probably eat more at home than I did there, but the food didn't taste as good as it use to. I ate my three meals anyway, but was very conscience of what I ate. I am back on the wagon today and even though I try not to set goals for a short term, I did yesterday while I was talking to my husband. My goal is to lose 30 pounds before we head out on our next trip for dance. If I can lose that 30 lbs. I am going to treat myself to a nice dinner while we are at my daughters dance convention. That will be my cheat day. Now I just need to figure out how to get myself going again to get off of this stall. I might have to do a fasting day tomorrow and then go from there. Here's to hoping that I can get going again.
Ok..... those are my posts from my dashboard on Atkins. I haven't posted on there since the last one. I am branching out and posting here in hopes that this will help me a little more.
